Introducing PALOMA
At his Pan-Latin restaurant in midtown Manhattan, acclaimed chef PJ Calapa debuts a menu inspired by a childhood spent in his grandmother’s kitchen on the border of Mexico in Brownsville. The new restaurant, near Fifth Avenue is an equally loving nod to the cuisines of Central and South America where classic dishes like fluke aguachile, tuna tostadas and Pervuvian chicken and rice prove the Texan has a rare talent for flavorful, south of the border cuisine.
